Well for what it's worth, I'm not married but I've been at a buffet wedding in the past and quite frankly it was the best wedding I was ever at. Everything was on a tight budget and it didn't matter one bit. The food was great, the music was mighty and the craic was ninety. A few people on here seem to have done their own weddings and stuff so maybe pm them and see how it went.
