Default Pruning Time???

Can anybody tell me what the best time of year for pruning fruit trees is?? and also is there any particular way of doing it or can I just cut as much as I want off?

I have never had a gardeing question to which I haven't found the answer on GardenPlansIreland.com. They even have a whole forum dedicated to fruit and vegetable growing.

Prune fruit trees to the shape of a wine glass, that is,have no branches crossing each other you can prune them now.
